This distance learning course is an overview of wine production practices and the scientific principles behind them, assuming no previous coursework in enology. Topics include harvest decisions, prefermentation options, yeast inoculation procedures, malolactic conversion, adjustments and stabilization. Course is geared toward students interested in home winemaking, though principles apply to larger scale winemaking.
