Through a series of directed readings, case studies, and roundtable discussions with industry leaders, this course focuses on strategic issues in the food and beverage industry that stem from challenges facing the global food system. In class, students critically evaluate selected cases related to food service management and sustainability to serve as the basis for class discussion and to foster a broader understanding of leadership and development strategies in the food and beverage industry as they pertain to the global food system.
