Current and entrepreneurial food operations must first research products before they go to market or are implemented.  This course discusses the multi-dimensional aspect of new product development and allows students to research factors that influence foods/beverages, including ingredients, market demands, and nutrition.  Using theoretical and experiential learning, students will develop a product or menu item for an entrepreneurial or operational company.

Fees Fees: $50 for product and uniform costs & an estimated $75 for a possible field trip to a food & beverage production company.
Permission Note Enrollment limited to: junior and senior students.
Prerequisites/Corequisites Prerequisite: Successful completion of HADM 2360 or by permission of the instructor.

Satisfies Requirement Elective.
