Students in this on-line course will discuss readings on the history and anthropology of the development of the global food system while at the same time document and examine their own food habits. The course will present case studies from Mexico, Peru, India, Africa, as well as from the United States so that students delve into the history and extent of corporate control of food production while they buy and consume food, and document and analyze their diet.
